The Hanna Instruments HI99162 is a durable, waterproof, and portable pH and temperature meter designed specifically for milk analysis. Automatic calibration is carried out at one or two points with two sets of buffers. All calibration and measurement readings are automatically compensated for temperature variations.
The HI99162 uses the FC101D amplified pH electrode made of PVDF that offers numerous features that enhance pH analysis for milk producers. The readings on the dual-level LCD screens for both pH and temperature, along with indicators for reading stability, battery percentage, and calibration instructions.

pH measurement in milk is important in impurity testing, spoilage, and signs of mastitis infection. While there are several factors that affect the composition of milk, pH measurements can help producers understand what might be causing certain changes in composition. pH measurement is frequently performed at various points in a milk processing plant.
Fresh milk has a pH value of 6.7. When the pH value of milk falls below pH 6.7, it usually indicates spoilage due to bacterial degradation. Bacteria from the Lactobacillaceae family are lactic acid bacteria (LAB) responsible for breaking down lactose in milk to form lactic acid. Eventually, when the milk reaches a sufficiently acidic pH, coagulation or curdling will occur along with the characteristic 'bitter' smell and taste of milk.
Milk with pH values above pH 6.7 potentially indicates that the milk may come from cows with a mastitis infection. Mastitis is a constant challenge with dairy milking cows. When infected, the cow's immune system releases histamine and other compounds in response to the infection. There is a resulting increase in the permeability of endothelial and epithelial cell layers, allowing blood components to pass through a paracellular pathway. Since blood is slightly alkaline, the resulting pH of the milk will be higher than normal. Generally, milk producers can carry out a somatic cell count to detect a mastitis infection, but a pH measurement offers a quick way to detect the infection.
Understanding the pH of raw milk can also help producers optimize their processing techniques. For example, in operations using Ultra High Temperature (UHT) processing, even small variations in pH 6.7 can affect the time required for pasteurization and the stability of the milk after treatment.
The HI99162 uses the pH electrode FC101D amplified with a PVDF body. This specialized electrode offers numerous features that enhance pH testing for milk producers. An integrated temperature sensor allows for temperature-compensated pH measurements without the need for a separate temperature probe. The contact between the large area of the bulb surface and the milk sample ensures stable calibration and measurement.
An integral part of any pH electrode is the reference junction. The reference junction is a part of the electrode that allows the flow of ions from the reference cell to the sample being tested. It is vital that this flow occurs in order to complete an electrical circuit, which ultimately determines the pH value. Any obstruction of the junction will prevent the circuit from being completed, resulting in readings that are erratic or constantly drifting.
The FC101D probe uses a secondary reference chamber with an outer ceramic junction allowing aqueous silver electrolyte to flow slowly through the porous ceramic frit providing accurate readings of aqueous samples.
The durable PVDF body of the FC101D ensures that pH measurements can be safely taken on the dairy farm or production plant. The electrode components are also capable of withstanding a wide range of temperatures to allow accuracy during stages such as pasteurization, which requires heating to temperatures close to 72 °C (161 °F).
