Professional portable pH meter for meat - HI98163

The HI98163 is a robust, waterproof, portable pH meter that measures pH and temperature using the specialized FC2323 meat pH electrode with a stainless steel piercing blade. This professional waterproof meter meets IP67 standards. The HI98163 comes with all the necessary accessories to carry out a pH/temperature measurement packaged in a durable thermoformed transport case that securely holds the meters, probes, and calibration buffers in place.

In the meat processing industry, pH monitoring is considered of utmost importance due to its effect on meat quality factors, including water binding capacity and shelf life. After slaughter, biochemical processes begin to break down the meat. Glycolysis begins post-mortem, the conversion of glycogen into lactic acid, which reduces the pH of the carcass. Depending on a number of factors such as the type of animal and even the breed, this decrease in pH can take from just one hour to many. It is vital to control the pH during this phase as once the lowest pH value is reached, the pH begins to rise slowly, indicating that decomposition has begun.

The pH value of meat influences its "water-holding capacity" which directly affects consumption qualities such as tenderness and color. Lower pH values result in lower water retention capacity and lighter colors. Factors like these can be important when considering how to efficiently produce meat products. For example, when producing dry sausages, the meat must have low water-binding capacity so that it can dry evenly.

Depending on the type of final product and the necessary steps to get there, pH values may vary throughout the meat industry. It is imperative, regardless of the final product, that pH is maintained at a low value to prevent bacterial spoilage and comply with food safety regulations. By controlling pH values throughout the meat production process, the creation of consistent and safe meat products can be ensured.

Meat products can present a number of challenges for the person needing to measure pH. Oils and solids from the meat layer can coat the sensitive glass membrane and/or obstruct the reference junction. The FC2323 supplied with the HI98163 is specifically designed for measuring pH in meat. Design considerations include a steel drilling blade around the probe tip shape for easier penetration, an open junction that resists clogging, and a food-grade polyvinylidene fluoride (PVDF) plastic body that is resistant to most chemicals and solvents, including sodium hypochlorite. It has high abrasion resistance, mechanical strength, and resistance to ultraviolet and nuclear radiation. PVDF is also resistant to fungal growth. The FC2323 is a general-purpose pH electrode ideal for meat that connects to the HI98163 with a waterproof quick-connect DIN connector, allowing for secure, non-threaded attachment.

The FC2323 is a pH electrode with amplification and an integrated temperature sensor. This probe is designed with low temperature (LT) glass, a conical tip shape, and is housed in a food-grade PVDF body with a removable stainless steel leaf perforation. This electrode also features a unique open junction design where there is a layer of Viscolene electrolyte (hard gel) that is free of silver chloride (AgCl) between the sample to be measured and the internal reference cell. The obstruction-resistant open junction design and the conical tip of the probe make it ideal for pH measurements in meat and semi-solid food samples.

The conical tip design allows penetration into solids, semi-solids, and emulsions for direct pH measurement in food products including meat, cheese, yogurt, and milk.

reference open junction

Open union reference

The open joint design consists of a solid gel interface (Viscolene) between the sample and the internal Ag/AgCl reference. This interface not only prevents silver from entering the sample but also makes it impermeable to obstruction, resulting in a quick response and stable reading.

PVDF body

Polyvinylidene fluoride (PVDF) is a food-grade plastic that is resistant to most chemicals and solvents, including sodium hypochlorite. It has high abrasion resistance, mechanical strength, and resistance to ultraviolet and nuclear radiation. PVDF is also resistant to fungal growth.

In addition to being supplied with a single pH electrode for meat, the HI98163 has Hanna's exclusive CAL CHECK ™ function that alerts the user to potential problems during the calibration process. This is very important for the food processor, as the probe is likely to become coated with solids present in the food product being measured. This coating can easily lead to errors in pH measurement. By comparing the calibration data prior to the current calibration, the meter will inform the user, with screen indications, when the probe needs to be cleaned, replaced, or if the pH buffer may be contaminated. After calibration, the overall condition of the probe is displayed on the screen as a percentage from 0 to 100% in increments of 10%. The condition of the probe is affected by both the compensation characteristics and the slope of the pH electrode, which can be found in the GLP data.

By pressing the virtual 'AutoHold' key in measurement mode, the meter will freeze and automatically record a stable reading. A 'out of calibration range' warning can be enabled to alert the user when a reading is not within the calibrated pH value range.

The log-on-demand mode allows the user to record and save up to 200 samples. The recorded data, along with the associated GLP data, can then be retrieved or transferred to a PC using the micro USB cable HI920015 from Hanna HI92000 and the software for traceability in maintaining records of specific product batches. The GLP data includes date, time, calibration buffers, offset, and slope, and can be accessed directly by pressing the dedicated GLP key.

A context-sensitive help menu based on the currently displayed screen can be accessed at any time with just a dedicated button press.

The high contrast, graphic LCD display is easy to see outdoors in sunlight as well as in low-light areas with backlight. A combination of dedicated and virtual keys allows for easy, intuitive operation of the meter in a variety of languages.

The HI720161 case is compact, durable, and thermoformed to hold all necessary components for field measurement, including the meter and electrode, beakers, buffer solutions, and cleaning solutions.
